Ingredients
  

  • 2 cups long-grain white rice
  • 1 can diced green chiles 4-ounce
  • 1 bunch cilantro chopped
  • 2 tablespoons salted butter
  • to taste garlic salt
  • to taste black pepper
  • 4 cups chicken broth
  • 1 tablespoon lime juice fresh

Method
 

  1. Start by rinsing the long-grain white rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming gummy.
  2. In a large pot, melt the salted butter over medium heat. Once melted, add the rinsed rice and sauté for about 2-3 minutes, stirring frequently. This step toasts the rice slightly, enhancing its flavor.
  3. Pour in the 4 cups of chicken broth and add the can of diced green chiles. Stir in garlic salt and black pepper to taste. Bring the mixture to a boil over high heat.
  4. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes. Avoid lifting the lid during cooking to ensure even steam distribution.
  5. After the rice has absorbed all the liquid, remove the pot from heat. Let it sit, covered, for an additional 5 minutes. Then, use a fork to fluff the rice gently. Stir in the chopped cilantro and lime juice, mixing until well combined.
  6. Your Cilantro Lime Rice is now ready to be served! Pair it with your favorite grilled dishes.
