  • kosher salt (for topping the chips)
For the Cannoli Dip:
  • 16 ounces whole-milk ricotta cheese (454 grams, BelGioioso recommended)
  • 1 cup granulated sugar (133 grams)
  • 1 tablespoon orange zest (6 grams, from an orange)
  • 1 teaspoon pure vanilla extract (2 grams)
  • 1 tablespoon finely chopped candied ginger (17 grams)
  • 1 cup semisweet mini chocolate chips (44 grams)

Method
 

Instructions:
  1. Step 1: Prepare the Wonton Chips - Begin by heating peanut oil in a frying pan over medium heat. You want enough oil to submerge the wonton wrappers but not too much that it splatters everywhere.
  2. Step 2: Fry the Wonton Wrappers - Once the oil is hot, carefully add a few wonton triangles to the pan. Fry them until they become golden brown and crispy, about 1-2 minutes. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate. Sprinkle with a little kosher salt while they’re still warm.
  3. Step 3: Make the Cannoli Dip - In a large mixing bowl, combine the whole-milk ricotta cheese, granulated sugar, orange zest, vanilla extract, and chopped candied ginger. Use a spatula to mix everything together until well combined and smooth.
  4. Step 4: Add the Chocolate Chips - Gently fold in the semisweet mini chocolate chips into the ricotta mixture. This step is key to ensuring you don’t break the chocolate chips while mixing.
  5. Step 5: Serve - Transfer the cannoli dip to a serving bowl and serve alongside your crispy wonton chips. You can garnish the dip with a few extra chocolate chips or a sprinkle of orange zest for a pop of color.
