Chicken Sausage Pasta with Spinach, Lemon, and Green Beans

Ingredients
  

  • 8 ounces uncooked pasta your choice of pasta, penne or fusilli recommended
  • 1 teaspoon olive oil for sautéing
  • 16 ounces chicken sausage cut into bite-size pieces
  • 12 ounces fresh green beans cut into bite-size pieces
  • 1/2 cup frozen chopped spinach thawed and drained, or 1 cup fresh, chopped spinach
  • 2 tablespoons sun-dried tomatoes chopped
  • 1/2 lemon juice for brightness
  • 4 cloves garlic minced
  • 2 dashes Italian seasoning
  • to taste red pepper flakes
  • to taste salt & pepper

Equipment

  • Colander

Method
 

  1. Start by bringing a large pot of salted water to a boil. Add in your uncooked pasta and cook according to package instructions until al dente, about 8-10 minutes. Once cooked, drain the pasta in a colander and set aside.
  2. In the same pot, heat olive oil over medium heat. Add the chicken sausage pieces and cook until browned and heated through, about 5-7 minutes.
  3. Once the sausage is cooked, add the fresh green beans to the pot. Sauté for another 3-4 minutes until tender but still crisp. Stir in the minced garlic, thawed spinach, and sun-dried tomatoes. Cook for an additional 2 minutes.
  4. Add the cooked pasta back into the pot and mix everything together. Squeeze in the lemon juice and sprinkle with Italian seasoning, red pepper flakes, and salt & pepper. Toss until well combined and heated through.
  5. Serve your Chicken Sausage Pasta warm. Enjoy it on its own or topped with grated Parmesan cheese.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat on the stove over low heat, adding a splash of water or broth to keep it moist.
  • For meal prep, cook pasta and sausage separately, combine with vegetables closer to serving for best texture.
