For the Chicken:
  • 1 lb boneless skinless chicken breasts Cut into 1-inch pieces for even cooking.

For the Sauce:
  • 16.9 oz Alfredo sauce Store-bought or homemade.
  • 3 tablespoons prepared pesto Fresh or jarred, based on your preference.
For Garnish:
  • Chives Optional garnish.
  • Coarsely ground pepper Optional garnish.

Cooking Steps:
  1. Step 1: Cook the Pasta - Start by bringing a large pot of salted water to a boil. Add the rigatoni pasta and cook according to the package instructions until al dente, usually about 10-12 minutes. Drain the pasta in a colander and set aside.
  2. Step 2: Sauté the Chicken - In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the chicken breast pieces with salt and pepper. Once the oil is hot, add the chicken to the skillet in a single layer. Cook for about 5-7 minutes, stirring occasionally, until the chicken is golden brown and fully cooked through.
  3. Step 3: Combine Sauce and Pesto - Once the chicken is cooked, lower the heat and pour in the Alfredo sauce. Stir in the prepared pesto until well combined. Allow the mixture to simmer gently for about 3-5 minutes, stirring occasionally.
  4. Step 4: Add the Pasta - Add the drained rigatoni pasta to the skillet with the chicken and sauce. Toss everything together until the pasta is evenly coated with the creamy sauce. Add a splash of pasta water if the sauce is too thick.
  5. Step 5: Serve and Garnish - Once everything is combined, remove the skillet from the heat. Serve the Chicken Pesto Alfredo Pasta warm, garnished with chopped chives and coarsely ground pepper if desired.
