Ingredients
  

For the Chicken:
  • 1 pound chicken breasts Thinly sliced
  • Salt and pepper To season the chicken
  • 1 cup all-purpose flour For dredging the chicken
  • 1 cup Italian bread crumbs For that crispy coating
  • 1 cup grated Parmesan cheese Divided for the breadcrumb mixture and topping
  • ½ cup olive oil For frying the chicken
  • 1 cup spaghetti sauce Divided for layering
  • 8 ounces mozzarella cheese Sliced or shredded for topping

Method
 

Cooking Instructions:
  1. Step 1: Prepare the Chicken - Season your thinly sliced chicken breasts with salt and pepper on both sides.
  2. Step 2: Set Up the Dredging Station - In three shallow dishes, place the flour in the first, the beaten eggs in the second, and a mixture of the breadcrumbs and half of the grated Parmesan cheese in the third.
  3. Step 3: Bread the Chicken - Dredge each chicken breast in the flour, dip it into the beaten eggs, and coat it in the breadcrumb mixture.
  4. Step 4: Fry the Chicken - In a large skillet, heat the olive oil over medium heat. Add the breaded chicken breasts and cook for 3-4 minutes on each side.
  5. Step 5: Assemble the Chicken Parmesan - Preheat your oven to 375°F (190°C). Spread half of the spaghetti sauce in a baking dish, place the fried chicken on top, add more sauce, and sprinkle with mozzarella and Parmesan.
  6. Step 6: Bake to Perfection - Bake for about 20-25 minutes, or until the cheese is bubbly and golden.

Notes

  • For a healthier option, use whole wheat flour.
  • Try panko breadcrumbs for a lighter, crispier coating.
  • Store leftovers in the refrigerator for up to 3 days.
