Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons homemade chicken seasoning
  • 1 tablespoon olive oil
  • 2 cups cooked rice
  • 2 cups steamed green beans

Equipment

  • Cutting board
  • Knife
  • Skillet or pan
  • Rice cooker or pot
  • Steamer basket
  • Meal prep containers

Method

  1. Begin by trimming any excess fat from the boneless skinless chicken breasts. Pat them dry with a paper towel, then season both sides generously with your homemade chicken seasoning.
  2. In a skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken breasts. Cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
  3. If you haven’t prepared the rice yet, follow the instructions on the package to cook 2 cups of rice. Fluff it with a fork once it’s done to achieve that perfect texture.
  4. While the chicken and rice are cooking, steam the green beans in a steamer basket over boiling water for about 5-7 minutes, or until they are bright green and tender-crisp.
  5. Now it’s time to put everything together! In each meal prep container, start with a base of cooked rice, add sliced chicken on top, followed by a generous serving of steamed green beans.
  6. Let the bowls cool completely before sealing them with lids. Store them in the refrigerator for up to 4-5 days. When you're ready to eat, simply reheat in the microwave and enjoy!
