Ingredients
  

  • 1.5 cups cottage cheese
  • 16 large eggs
  • 1 can diced green chiles 7 oz.
  • 2.75 cups grated Cheddar-Jack cheese
  • 1 bunch green onions chopped
  • 1 tsp. Spike Seasoning
  • to taste Salt and fresh-ground black pepper

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, crack the 16 eggs and whisk them until fully combined and frothy.
  3. Add 1 ½ cups of cottage cheese, 1 tsp. of Spike Seasoning, and a pinch of salt and fresh-ground black pepper. Stir until well combined.
  4. Add the can of diced green chiles to the egg mixture and stir gently.
  5. Fold in 2 ¾ cups of grated Cheddar-Jack cheese and the chopped green onions, reserving some for topping.
  6. Lightly grease your 9x13-inch baking dish and pour the egg and cheese mixture into the prepared dish.
  7. Sprinkle the reserved cheese and green onions on top of the casserole.
  8. Bake for 30-35 minutes, until the edges are golden brown and the center is set.
  9. Remove from the oven and allow to cool for a few minutes before slicing.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • You can freeze the casserole before baking; thaw overnight before baking.
  • Reheat individual portions in the microwave or toaster oven until warmed through.
