Preheat your oven to 350°F (175°C).
In a large mixing bowl, crack the 16 eggs and whisk them until fully combined and frothy.
Add 1 ½ cups of cottage cheese, 1 tsp. of Spike Seasoning, and a pinch of salt and fresh-ground black pepper. Stir until well combined.
Add the can of diced green chiles to the egg mixture and stir gently.
Fold in 2 ¾ cups of grated Cheddar-Jack cheese and the chopped green onions, reserving some for topping.
Lightly grease your 9x13-inch baking dish and pour the egg and cheese mixture into the prepared dish.
Sprinkle the reserved cheese and green onions on top of the casserole.
Bake for 30-35 minutes, until the edges are golden brown and the center is set.
Remove from the oven and allow to cool for a few minutes before slicing.
