Step 1: Preheat your oven to 375°F (190°C) for even cooking.
Step 2: Flatten chicken breasts to about 1 inch thick using a meat mallet.
Step 3: Beat the eggs in a shallow bowl, and place the Italian bread crumbs in another. Dip chicken in eggs, then coat with bread crumbs.
Step 4: Melt 2 tablespoons of butter in a skillet over medium heat. Sauté half of the mushrooms until golden and tender, about 5-7 minutes. Set aside and repeat with remaining mushrooms.
Step 5: In the same skillet, melt the remaining 2 tablespoons of butter. Cook the breaded chicken for about 4-5 minutes per side until golden brown.
Step 6: In a baking dish, pour in the chicken broth, place sautéed mushrooms on top of chicken, and sprinkle mozzarella cheese.
Step 7: Bake in the preheated oven for approximately 25-30 minutes until chicken is cooked through and cheese is bubbly.
