Ingredients
  

  • 2 eggs eggs beaten
  • 1 cup Italian bread crumbs
  • 16 ounces sliced mushrooms divided
  • 4 tablespoons salted butter divided
  • 2 pounds boneless skinless chicken breasts
  • 8 ounces mozzarella cheese shredded
  • 1 cup chicken broth

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C) for even cooking.
  2. Step 2: Flatten chicken breasts to about 1 inch thick using a meat mallet.
  3. Step 3: Beat the eggs in a shallow bowl, and place the Italian bread crumbs in another. Dip chicken in eggs, then coat with bread crumbs.
  4. Step 4: Melt 2 tablespoons of butter in a skillet over medium heat. Sauté half of the mushrooms until golden and tender, about 5-7 minutes. Set aside and repeat with remaining mushrooms.
  5. Step 5: In the same skillet, melt the remaining 2 tablespoons of butter. Cook the breaded chicken for about 4-5 minutes per side until golden brown.
  6. Step 6: In a baking dish, pour in the chicken broth, place sautéed mushrooms on top of chicken, and sprinkle mozzarella cheese.
  7. Step 7: Bake in the preheated oven for approximately 25-30 minutes until chicken is cooked through and cheese is bubbly.

  • Use a meat thermometer to check chicken reaches 165°F (75°C) for doneness.
