Once the yeast mixture is frothy, pour it into the bowl with the dry ingredients. Mix everything together with a wooden spoon until a dough begins to form.
Transfer the dough onto a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic.
Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
Preheat your oven to 375°F (190°C). Once the dough has risen, punch it down gently to release the air. Roll it out into a rectangle about 1/2 inch thick.
Spread melted butter over the dough and sprinkle the shredded cheddar cheese evenly on top, along with the parmesan cheese.
Using a sharp knife or a pizza cutter, slice the dough into strips.
Arrange the cut strips on a baking sheet lined with parchment paper. Cover them with the kitchen towel again and let them rise for another 15-30 minutes.
Bake the breadsticks in the preheated oven for 15-20 minutes or until they are golden brown and the cheese is bubbly.
Once baked, remove them from the oven and brush with the remaining melted butter. Sprinkle with chopped parsley and serve warm.
