Ingredients
  

  • 1 recipe Vegan Cheese Sauce
  • 1 clove garlic additional, for flavor
  • 1 teaspoon sea salt additional, for seasoning
  • 1 teaspoon smoked paprika heaping, for depth of flavor
  • 1 pinch cayenne for heat
  • 2 pounds cauliflower large, broken into 1-inch florets
  • 1 cup panko bread crumbs for topping
  • to taste Parmesan or Vegan Parmesan optional, for serving

Method
 

  1. Step 1: Prepare the Cauliflower: Bring a large pot of salted water to a boil. Add the cauliflower florets and cook for about 5-7 minutes until tender but not mushy. Drain and set aside.
  2. Step 2: Make the Vegan Cheese Sauce: In a blender or food processor, combine the Vegan Cheese Sauce, the additional garlic clove, sea salt, smoked paprika, and cayenne. Blend until smooth and creamy. Taste and adjust seasonings as necessary.
  3. Step 3: Combine the Ingredients: In a large mixing bowl, combine the drained cauliflower and the vegan cheese sauce. Gently fold together until the cauliflower is well-coated.
  4. Step 4: Prepare for Baking: Preheat your oven to 350°F (175°C). Transfer the cauliflower and cheese mixture into a baking dish and spread it out evenly. Top with panko bread crumbs.
  5. Step 5: Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes or until the top is golden brown and crispy.
  6. Step 6: Serve: Once baked, remove from the oven and let it cool slightly. Serve warm with a sprinkle of Parmesan or Vegan Parmesan on top if desired.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
  • To reheat, add a splash of non-dairy milk to keep it creamy.
  • This dish can be made ahead of time; just store components separately until ready to bake.
