Carne Molida (Ground Beef with Vegetables)

Ingredients
  

  • 1 pound ground beef
  • 1 teaspoon salt or to taste, divided
  • ½ teaspoon pepper (freshly cracked, or ground)
  • 2 tablespoons oil for frying, or olive oil
  • 1 large white onion diced
  • 3 cloves garlic chopped
  • 1 cup tomato sauce
  • 1 large carrot peeled and diced
  • ½ pound waxy potatoes (0.35 kg), diced
  • ½ cup pitted green olives (optional)
  • 1 stalk celery chopped (optional)
  • 1 large red bell pepper diced
  • 1 tablespoon hot sauce or to taste
  • 1 tablespoon minced fresh parsley

Method
 

  1. In a large skillet, heat the oil over medium heat. This will create a sizzling base for our Carne Molida.
  2. Add the diced onion and chopped garlic to the skillet. Sauté for about 2-3 minutes, or until the onions become translucent and fragrant.
  3. Increase the heat to medium-high and add the ground beef to the skillet. Season with ½ teaspoon salt and pepper. Cook until the beef is browned and fully cooked through, about 5-7 minutes. Make sure to break apart any large chunks with your spoon.
  4. Stir in the diced carrot, waxy potatoes, celery (if using), and red bell pepper. Cook for another 5 minutes, stirring occasionally, until the vegetables are slightly tender.
  5. Pour in the tomato sauce and mix everything together. Bring the mixture to a gentle simmer.
  6. Add the remaining salt, hot sauce, and olives (if using). Let it simmer for 10-15 minutes, allowing the flavors to meld and the vegetables to cook through.
  7. Just before serving, sprinkle fresh parsley on top for a burst of color and flavor. Serve warm with rice, tortillas, or your favorite side.

Notes

  • Don’t rush the browning process; it adds depth of flavor.
  • Feel free to swap out the ground beef for ground turkey or chicken for a lighter version.
  • Experiment with different spices or herbs, such as cumin or oregano, to tailor the flavor profile.
