Instructions:
  1. Step 1: Prepare the Cheesecake Filling - In a large mixing bowl, beat the room temperature cream cheese with an electric mixer until smooth and creamy. This should take about 2-3 minutes.
  2. Step 2: Add the Sweetness - Gradually add the sifted powdered sugar, mixing until fully incorporated. Then add the lemon juice and salt, mixing until well-blended. The filling should be luscious and creamy.
  3. Step 3: Whip the Cream - In a separate bowl, pour in the heavy whipping cream. Using the electric mixer, whip the cream on high speed until stiff peaks form. This will take about 3-5 minutes.
  4. Step 4: Fold it Together - Gently fold one-third of the whipped cream into the cheesecake mixture to lighten it. Once combined, fold in the remaining whipped cream until no streaks remain. Be gentle to keep the mixture airy.
  5. Step 5: Prepare the Fruit - Wash and chop your assorted fruits into bite-sized pieces. You can create a colorful mix using strawberries, blueberries, raspberries, and kiwi.
