Ingredients
  

  • 3 pounds chicken wings split and tips removed
  • 1 tablespoon aluminum-free baking powder
  • 1 teaspoon fine sea salt
  • 2 teaspoons garlic powder
  • 1/4 cup unsalted butter melted
  • 1/4 cup hot pepper sauce
  • 1 tablespoon granulated sugar

Method
 

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.
  2. Pat the chicken wings dry using paper towels. This crucial step ensures they become crispy in the oven.
  3. In a large bowl, combine the baking powder, sea salt, and garlic powder. Add the wings and toss until they are evenly coated.
  4. Place the seasoned wings in a single layer on the wire rack. Make sure there is space between them to allow air to circulate.
  5. Bake the wings in the preheated oven for 40-45 minutes, flipping them halfway through, until they are golden brown and crispy.
  6. While the wings are baking, melt the butter in a small saucepan over medium heat. Once melted, remove from heat and stir in the hot pepper sauce and granulated sugar until well combined.
  7. Once the wings are done baking, transfer them to a large bowl, pour the Buffalo sauce over them, and toss until they are fully coated. Serve hot with your favorite dipping sauces and sides!
