Ingredients

  • 1 cup unsalted butter
  • 1 cup creamy peanut butter (not the natural no-stir variety)
  • 2 teaspoons pure vanilla extract
  • 3 cups powdered sugar (sifted)
  • 1 cup milk chocolate chips
  • 1 tablespoon salted sweet cream butter (softened)
  • 1 cup sweetened condensed milk

Equipment

  • Mixing bowls
  • Spatula
  • 9x9 inch Baking Pan
  • Double boiler or microwave-safe bowl
  • Wax paper or parchment paper

Method

  1. Step 1: Prepare Your Pan - Begin by lining your 9x9 inch baking pan with wax paper or parchment paper. This will help you easily lift the fudge out once it’s set.
  2. Step 2: Make the Peanut Butter Layer - In a large mixing bowl, combine 1 cup of unsalted butter and 1 cup of creamy peanut butter. Using a spatula, mix until smooth. Add 2 teaspoons of pure vanilla extract and continue to mix.
  3. Step 3: Sweeten It Up - Gradually add 3 cups of sifted powdered sugar to the peanut butter mixture. Stir until fully incorporated and smooth. The mixture will be thick.
  4. Step 4: Spread the Peanut Butter Layer - Pour the peanut butter mixture into the prepared baking pan and spread it evenly. Use the spatula to smooth out the top.
  5. Step 5: Melt the Chocolate - In a double boiler or microwave-safe bowl, melt 1 cup of milk chocolate chips together with 1 tablespoon of softened salted sweet cream butter. Stir until smooth and creamy.
  6. Step 6: Top It Off - Pour the melted chocolate over the peanut butter layer in the baking pan. Use your spatula to spread it evenly over the top.
  7. Step 7: Chill and Set - Place the baking pan in the refrigerator and let the fudge set for at least 2 hours, or until firm.
  8. Step 8: Slice and Serve - Once set, lift the fudge out of the pan using the edges of the paper. Cut into squares and serve. Enjoy your delightful Buckeye Fudge!
