Ingredients
  

  • 4 cups riced broccoli fresh or frozen, well-drained
  • 1 large egg acts as a binder
  • 1/2 cup shredded cheddar cheese for melty goodness
  • 1/2 cup shredded Parmesan cheese adds savory flavor
  • 1/2 cup all-purpose flour helps hold the tots together
  • 1/4 cup grated onion for sweetness and moisture
  • 1 clove garlic minced
  • 1 teaspoon salt to taste
  • 1/2 teaspoon ground pepper for a little kick

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Rice the broccoli by chopping fresh florets and pulsing in a food processor or thawing and draining frozen broccoli.
  3. In a large mixing bowl, combine riced broccoli, egg, cheddar cheese, Parmesan cheese, flour, grated onion, garlic, salt, and pepper. Mix until well combined.
  4. Shape the mixture into small tots and place them on a parchment-lined sheet pan.
  5. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
  6. Let cool for a few minutes before serving warm.

Notes

  • Drain excess moisture from riced broccoli to avoid soggy tots.
  • Prepare the mixture ahead of time and refrigerate for up to 24 hours.
  • Broil for 2-3 minutes for extra crispiness.
