Ingredients
  

  • 1 tablespoon extra-virgin olive oil
  • 2 cups broccoli florets, chopped
  • 1 large red bell pepper, diced
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 large eggs
  • 1/2 cup sharp cheddar cheese, freshly grated
  • 6 ounces cooked chicken breast, shredded

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In your oven-safe skillet, heat the olive oil over medium heat. Add the broccoli, bell pepper, and green onions. Sauté for about 5 minutes until tender. Add garlic, salt, and pepper.
  3. Step 3: In a mixing bowl, whisk the eggs together until well combined.
  4. Step 4: Pour the whisked eggs over the sautéed vegetables in the skillet. Sprinkle cheese and chicken on top.
  5. Step 5: Cook on the stove for about 5 minutes until edges start to set.
  6. Step 6: Transfer the skillet to the oven and bake for 15-20 minutes until puffed and golden brown.
  7. Step 7: Let cool for a few minutes, slice into wedges, and serve warm.
