Ingredients
  

  • 3 medium bananas very ripe
  • 1/2 cup butter unsalted, melted
  • 1 tsp vanilla extract
  • 2 eggs whisked
  • 1 1/2 cups all-purpose flour or substitute half with whole wheat flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup blueberries fresh or frozen
  • 1 cup semi-sweet chocolate chips or chunks

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan with cooking spray or butter, or line it with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add melted butter, vanilla extract, and whisked eggs to the mashed bananas and mix well.
  5. In a separate bowl, whisk together all-purpose flour, white sugar, brown sugar, baking powder, salt, and cinnamon.
  6. Gradually add the dry mixture to the wet ingredients, folding gently until just combined.
  7. Gently fold in the blueberries and semi-sweet chocolate chips.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let it cool in the pan for about 10 minutes before transferring to a cooling rack.

Notes

  • For extra moisture, use very ripe bananas.
  • Store leftovers in an airtight container for up to 3 days.
  • You can freeze the bread for up to 3 months.
