Ingredients
  

For the Ice Cream:
  • 4 ounces unsweetened chocolate
  • 1 cup milk whole
  • 2 large eggs
  • 1 cup sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla
  • 1 pinch salt

Method
 

Directions:
  1. Step 1: Melt the Chocolate - Chop the 4 ounces of unsweetened chocolate into small pieces. Place in a double boiler over simmering water or a microwave-safe bowl. Heat in 30-second intervals, stirring until melted.
  2. Step 2: Prepare the Egg Mixture - In a mixing bowl, whisk together the 2 large eggs and 1 cup of sugar until pale and thickened, about 2-3 minutes.
  3. Step 3: Combine the Ingredients - Slowly add melted chocolate to the egg mixture, whisking continuously. Then, pour in 1 cup of milk and mix well.
  4. Step 4: Cook the Mixture - Transfer the mixture to a saucepan over medium heat. Stir until thickened, about 5-7 minutes. Do not boil.
  5. Step 5: Add Cream and Flavoring - Remove from heat and stir in 1 cup of heavy cream, 1 teaspoon of vanilla, and a pinch of salt.
  6. Step 6: Chill the Mixture - Allow to cool, then refrigerate for at least 2 hours or overnight.
  7. Step 7: Churn the Ice Cream - Pour the mixture into an ice cream maker and churn according to instructions, usually around 20-25 minutes.
  8. Step 8: Freeze and Enjoy - Transfer to a storage container and freeze for at least 4 hours before serving.

  • Store in an airtight container for up to two weeks.
