Ingredients

  • 4 teaspoons aluminum-free baking powder

  • 1/4 teaspoon ground nutmeg
  • 2 large eggs, separated
  • 1/2 cup vegetable oil
  • 2 cups milk
  • 2 teaspoons pure vanilla extract

Method
 

  1. Step 1: Preheat the Waffle Iron.
  2. Step 2: Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cornstarch, baking powder, sugar, salt, cinnamon, and nutmeg.
  3. Step 3: Separate the Eggs: In a separate bowl, separate the egg yolks from the egg whites.
  4. Step 4: Combine Wet Ingredients: In the bowl with the egg yolks, add the vegetable oil, milk, and vanilla extract. Whisk until well combined.
  5. Step 5: Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined.
  6. Step 6: Whip the Egg Whites: Using a hand mixer or whisk, beat the egg whites until stiff peaks form.
  7. Step 7: Fold in the Egg Whites: Gently fold the whipped egg whites into the batter using a spatula.
  8. Step 8: Cook the Waffles: Pour the recommended amount of batter into the center of the iron and cook until golden brown, about 4-5 minutes.
  9. Step 9: Serve and Enjoy: Carefully remove the waffles and serve hot with your favorite toppings.
