Ingredients

  • 2 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 cup Unsalted Butter melted and softened for frosting
  • 3 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 4 large Eggs
  • 1 teaspoon Vanilla Extract (5 ml)
  • 1 cup Buttermilk (296 ml)
  • 1 cup Cocoa Powder (if making a chocolate variation)
  • 3 cups Powdered Sugar for frosting
  • 2-3 tablespoons Heavy Whipping Cream for frosting (30-45 ml)

Equipment

  • Mixing bowls
  • Electric mixer
  • Measuring cups and spoons
  • Baking Pans
  • Cooling rack

Method

  1. Preheat your oven to 350°F (175°C). Grease and flour your cake pans or line them with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In another bowl, combine the melted butter and granulated sugar. Use an electric mixer to beat until the mixture is light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and blend until fully incorporated.
  5. Gradually add the dry ingredients to the butter mixture while alternating with the buttermilk. Begin and end with the flour mixture, mixing just until combined.
  6. Divide the batter evenly between the prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  7. Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a cooling rack to cool completely.
  8. In a mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar and continue mixing. Add vanilla extract and heavy whipping cream gradually until you achieve your desired frosting consistency.
  9. Once the cakes are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.

Notes

  • For a chocolate cake, add 1 cup of cocoa powder to the dry ingredients.
  • Try adding citrus zest for a refreshing flavor.
  • Store leftovers wrapped tightly at room temperature for up to 3 days.
