Ingredients
  

  • 1 large egg
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon natural sweetener/sugar of choice
  • 1 teaspoon vanilla extract
  • 2 tablespoons low-fat cream cheese
  • 1 tablespoon extra natural sweetener/sugar of choice
  • 1 ripe sliced banana (enough to cover one toast)
  • 2 pieces bread of choice (sourdough recommended)
  • Caramel chips (optional: for more caramel flavors)
  • 3 tablespoons light butter
  • 4 tablespoons brown sugar
  • 2 tablespoons milk
  • 4 tablespoons water (or more if needed)

Method
 

  1. In a mixing bowl, combine the egg, almond milk, natural sweetener, and vanilla extract. Whisk until well combined.
  2. Incorporate the cream cheese and extra natural sweetener into the egg mixture. Whisk until smooth.
  3. Carefully slice your ripe banana into rounds.
  4. Dip the two pieces of bread into the egg mixture, allowing each side to soak briefly.
  5. Melt the light butter in a frying pan over medium heat. Cook the soaked bread slices for about 3-4 minutes on each side until golden brown.
  6. In a small saucepan, combine brown sugar, milk, and water. Stir over medium heat until smooth and thickened.
  7. Stack the cooked French toast on a plate, layer with banana slices, and drizzle with caramel sauce. Optional: sprinkle caramel chips on top.
  8. Serve warm and enjoy!
