Ingredients
  

  • 1 3/4 cups all-purpose flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon apple pie spice
  • 2 large eggs lightly beaten
  • 1/2 cup butter melted and slightly cooled
  • 3 large ripe bananas
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line your muffin tin with paper liners or lightly grease each cup.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and apple pie spice until well combined.
  4. In another bowl, mash the ripe bananas until smooth. Add the eggs, melted butter, and vanilla extract. Mix until just combined.
  5. Pour the wet ingredients into the dry ingredients and gently fold the mixture together until just combined.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted into a muffin comes out clean.
  8. Remove from oven and let cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use ripe bananas with brown spots for maximum sweetness.
  • Don't overmix to keep muffins light and fluffy.
  • Store muffins in an airtight container for up to 3 days.
