Ingredients
  

For the Fish:
  • 2 fillets Mahi Mahi defrosted
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon pepper
  • Pinch chili flakes
  • 1 tablespoon oil
  • 4 tablespoons butter
  • 1 clove garlic thinly sliced
  • 3 slices lemon
  • 2 sprigs fresh thyme
  • 2 sprigs fresh dill
  • 3/4 cup cherries pitted and roughly chopped
  • 1 tablespoon capers drained
  • 1/3 cup mixed herbs chopped (mostly dill, some parsley, and chives)
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 2/3 cup olive oil
  • Pinch salt
  • Pinch pepper
For Serving:
  • 1 cup cooked wild rice
  • 1 cup steamed broccoli

Method
 

Preparation Steps:
  1. Preheat your oven to 375°F (190°C).
  2. In a baking dish, place the defrosted Mahi Mahi fillets. Drizzle with oil and season with sea salt, pepper, and a pinch of chili flakes. Rub the seasonings all over the fillets.
  3. In a small saucepan, melt the butter over medium heat. Add the sliced garlic and sauté until fragrant and lightly golden. Pour the garlic butter over the seasoned fillets. Top each fillet with lemon slices, sprigs of thyme, and dill.
  4. In a mixing bowl, combine the chopped cherries, drained capers, mixed herbs, lemon juice, honey, olive oil, and a pinch of salt and pepper. Stir well to combine.
  5. Pour the cherry mixture over the Mahi Mahi fillets in the baking dish. Bake for about 20-25 minutes, or until the fish flakes easily with a fork.
  6. Serve hot alongside cooked wild rice and steamed broccoli, drizzling extra cherry sauce over the rice if desired.

Notes

  • Use fresh herbs for the best flavor.
  • If you have leftovers, refrigerate for up to 2 days.
  • Feel free to substitute Mahi Mahi with other flaky white fish.
