  • 1 loaf Hawaiian bread sliced into 3/4 inch thick pieces
  • 10 extra large eggs
  • 2 cups heavy cream
  • 12 ounces fresh raspberries
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 tablespoon orange, grated zest
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon salt
  • powdered sugar for dusting before serving
  • Maple syrup to drizzle on top

Method
 

Instructions:
  1. Step 1: Prepare the Baking Dish - Preheat your oven to 350°F (175°C). Grease your 9x13 inch baking dish with a little butter or cooking spray to prevent sticking.
  2. Step 2: Arrange the Bread - Layer the sliced Hawaiian bread in the prepared baking dish. Overlap the slices slightly to ensure every piece gets that delicious custard soak.
  3. Step 3: Make the Custard - In a large bowl, whisk together the eggs, heavy cream, granulated sugar, brown sugar, orange zest, vanilla extract, and salt until well combined.
  4. Step 4: Soak the Bread - Pour the custard mixture evenly over the bread slices, pressing down to ensure it absorbs the custard. Let it sit for about 15-20 minutes.
  5. Step 5: Add the Raspberries - Sprinkle the fresh raspberries evenly over the top of the soaked bread, gently pressing some into the custard.
  6. Step 6: Bake - Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, until golden brown.
  7. Step 7: Serve - Let cool for a few minutes, dust with powdered sugar, and serve with warm maple syrup drizzled on top.
