  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat your oven to 425°F (220°C). This high temperature will help crisp up the skin while keeping the meat juicy.
  2. Rinse the chicken leg quarters under cold water and pat them dry with paper towels.
  3. In a mixing bowl, combine the olive oil, paprika, garlic powder, onion powder, salt, and black pepper. Stir well until all the ingredients are thoroughly mixed.
  4. Place the chicken leg quarters in the baking dish. Pour the marinade over the chicken and use your hands to rub it in, ensuring each piece is well-coated.
  5. Arrange the chicken leg quarters in the baking dish, skin side up. Bake in the preheated oven for about 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  6. Once the chicken is done, remove it from the oven and let it rest for about 5-10 minutes.

Notes

  • For extra crispy skin, broil for the last few minutes of cooking.
