Ingredients
  

For the Burritos:
  • 4 pieces chicken breasts pounded to an even thickness
  • 1 piece red bell pepper sliced into strips
  • 1 piece green bell pepper sliced into strips
  • 1 piece onion sliced
  • 1 piece lime for juice
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • to taste salt and pepper
  • 2 cups Mexican 3 cheese blend
  • 10 pieces tortillas whole wheat or regular flour

Instructions
  1. Step 1: Prepare the Chicken - Pound the chicken breasts to an even thickness. Season both sides with salt, pepper, cumin, and garlic powder.
  2. Step 2: Cook the Chicken - Heat a large skillet over medium-high heat. Add a drizzle of oil and place the seasoned chicken breasts in the skillet. Cook for about 6-7 minutes on each side, or until they reach an internal temperature of 165°F. Remove from the skillet and let them rest before slicing.
  3. Step 3: Sauté the Vegetables - In the same skillet, add the sliced onions and bell peppers. Sauté for about 5-7 minutes until they're tender and slightly caramelized. Squeeze the juice of half a lime over the veggies.
  4. Step 4: Assemble the Burritos - Preheat your oven to 375°F (190°C). In a large bowl, combine the sliced chicken, sautéed veggies, and 1 cup of the cheese blend. Lay a tortilla flat and spoon about 1/2 cup of the mixture onto the center. Fold the sides in and roll tightly.
  5. Step 5: Bake the Burritos - Place the assembled burritos seam-side down in a greased baking dish. Top with the remaining cheese and cover with aluminum foil. Bake for 20 minutes, then uncover and bake for an additional 10 minutes until the cheese is bubbly and golden.
  6. Step 6: Serve - Remove the burritos from the oven and let them cool for a couple of minutes. Serve with extra lime wedges, salsa, or your favorite toppings.

Notes

  • These burritos can be customized with various toppings like avocado or salsa.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, bake at 350°F (175°C) for 15-20 minutes.
