Ingredients
  

For the Banana Bread:
  • 3 medium ripe bananas mashed (about 1 cup)
  • 1 teaspoon baking soda
  • 1/3 cup oil canola or vegetable oil works well
  • 2/3 cup sugar adjust based on sweetness preference
  • 2 large eggs beaten
  • 1 pinch salt
  • 1 and 1/3 cups all-purpose flour
  • 1/2 cup chopped walnuts optional, for added texture and flavor

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease your 9x5 inch loaf pan with a little oil or line it with parchment paper.
  3. Step 3: In a large mixing bowl, mash the 3 ripe bananas with a fork or potato masher until smooth.
  4. Step 4: Add the beaten eggs, oil, and sugar to the mashed bananas. Mix until well combined.
  5. Step 5: In another bowl, whisk together the flour, baking soda, and salt.
  6. Step 6: Gradually fold the dry mixture into the wet mixture, being careful not to overmix.
  7. Step 7: If using walnuts, gently fold them into the batter now.
  8. Step 8: Pour the batter into your prepared loaf pan. Bake for 55-65 minutes, or until a toothpick comes out clean.
  9. Step 9: Allow the banana bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Store wrapped in plastic wrap or in an airtight container for up to 3 days.
  • For longer storage, refrigerate for up to a week.
  • To freeze, slice and wrap each slice individually, store for up to 3 months.
