Instructions:
- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease your 9x5 inch loaf pan with a little oil or line it with parchment paper.
- Step 3: In a large mixing bowl, mash the 3 ripe bananas with a fork or potato masher until smooth.
- Step 4: Add the beaten eggs, oil, and sugar to the mashed bananas. Mix until well combined.
- Step 5: In another bowl, whisk together the flour, baking soda, and salt.
- Step 6: Gradually fold the dry mixture into the wet mixture, being careful not to overmix.
- Step 7: If using walnuts, gently fold them into the batter now.
- Step 8: Pour the batter into your prepared loaf pan. Bake for 55-65 minutes, or until a toothpick comes out clean.
- Step 9: Allow the banana bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
- Store wrapped in plastic wrap or in an airtight container for up to 3 days.
- For longer storage, refrigerate for up to a week.
- To freeze, slice and wrap each slice individually, store for up to 3 months.
