Begin by cutting the chicken thighs into bite-sized pieces. In a mixing bowl, combine soy sauce, honey, chopped garlic, and ginger. Add the chicken to the marinade and let it sit for at least 15 minutes to absorb all those wonderful flavors.
Heat a large skillet or wok over medium-high heat. Once hot, add a splash of oil (your choice) to coat the bottom.
Add the marinated chicken to the skillet, including all the marinade. Cook for about 5-7 minutes, stirring occasionally until the chicken is cooked through and nicely caramelized.
Once the chicken is nearly done, add the chopped pak choi to the skillet. Stir-fry for an additional 2-3 minutes, just until the pak choi is tender but still has a bit of crunch.
Sprinkle a pinch of black pepper and toasted white sesame over the dish. Serve hot over cooked rice if desired, and enjoy the explosion of flavors!
