Ingredients
  

  • 6 cups bite-sized broccoli flowerets
  • 1/4 cup thinly sliced red onion
  • 3/4 cup chopped mint leaves
  • 3/4 cup chopped peanuts
  • to taste your favorite salad dressing try a homemade soy-ginger dressing for an Asian twist!

Method
 

  1. Begin by washing the broccoli thoroughly under cold water. Cut it into bite-sized flowerets.
  2. Using a sharp knife, thinly slice the red onion. Soak the slices in cold water if you find it too strong.
  3. Rinse the mint leaves and pat them dry. Stack the leaves, roll them up, and slice them into thin ribbons. Chop the peanuts coarsely.
  4. In a large mixing bowl, combine the broccoli flowerets, sliced red onion, chopped mint leaves, and chopped peanuts. Toss gently.
  5. Drizzle your favorite salad dressing over the salad and toss again to ensure all ingredients are well coated.
  6. Transfer the salad to a serving dish or individual bowls and garnish with additional peanuts or mint leaves if desired.

Notes

  • For a different crunch, substitute broccoli with cauliflower or snap peas.
  • Fresh basil or cilantro can replace mint if needed.
  • Almonds or sunflower seeds can be used instead of peanuts.
