Method

  2. In a large mixing bowl, whisk together the 4 large eggs, 1/3 cup Greek yogurt, 1 tablespoon melted butter, 2 tablespoons nut butter, and 1 teaspoon vanilla extract until well combined and smooth.
  3. In another bowl, mix the 1 1/3 cups almond flour, 1 teaspoon baking powder, 2 tablespoons raw sugar, 2 tablespoons tapioca starch, 1/2 teaspoon cinnamon, and 1/2 teaspoon salt. Whisk these ingredients together to ensure even distribution.
  4. Gradually add the dry mixture to the wet ingredients, gently folding them together until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  5. Lightly grease the preheated waffle maker with a little cooking spray or additional melted butter. Pour the appropriate amount of batter onto the waffle maker, following your device's instructions. Close the lid and cook until the waffles are golden brown and crispy.
