Ingredients

  • 1 cup almond butter (I used Justin's Vanilla Almond Butter for a hint of sweetness)
  • 2 tablespoons coconut oil (melted)
  • 1 cup old-fashioned oats (feel free to use gluten-free oats)
  • 1/2 cup shredded coconut
  • 2 teaspoons honey (adjust based on your sweetness preference)
  • 3 tablespoons chocolate chips (optional, for a chocolatey twist)

Equipment

  • Mixing Bowl
  • Measuring cups and spoons
  • Spoon or spatula
  • Baking Sheet or Plate
  • Refrigerator

Method

  1. Start by gathering all of your ingredients and equipment. This will make the process smoother and quicker.
  2. In a mixing bowl, combine the almond butter and melted coconut oil. Stir until well mixed and smooth.
  3. To the almond butter mixture, add the old-fashioned oats, shredded coconut, and honey. If you’re using chocolate chips, add them at this stage too. Mix everything together until fully combined.
  4. Once the mixture is well combined, use your hands to scoop out small portions and roll them into balls, about 1 inch in diameter. Place them on a baking sheet or plate.
  5. Refrigerate the almond butter oat balls for at least 30 minutes to help them firm up. This step is essential for achieving the perfect texture.
  6. Once chilled, your Almond Butter Oat Balls are ready to be enjoyed! Store any leftovers in an airtight container in the fridge.

Notes

  • For extra flavor, try using flavored almond butter, such as cinnamon or cocoa.
  • Don’t skip the chilling step; it helps the oat balls hold their shape.
  • Feel free to customize the sweetness; if you prefer a less sweet treat, reduce the honey or omit the chocolate chips.
