  • 1 cup grated Parmesan cheese (and more for serving)
  • 1/2 cup extra-virgin olive oil
  • 2 cloves garlic
  • 1 teaspoon Dijon mustard
  • 3 tablespoons unsalted butter
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon sea salt
  • Freshly ground black pepper
  • 1 to 1 1/2 cups reserved pasta cooking water

  1. Step 1: Prepare the Cauliflower - Start by bringing a large pot of salted water to a boil. Add the cauliflower florets and cook until they are tender, about 8-10 minutes. Drain the cauliflower and reserve about 1 to 1 1/2 cups of the cooking water.
  2. Step 2: Blend the Ingredients - In a blender or food processor, combine the cooked cauliflower, grated Parmesan cheese, olive oil, garlic cloves, Dijon mustard, butter, lemon juice, sea salt, and freshly ground black pepper. Blend until you achieve a smooth, creamy consistency. If the sauce is too thick, gradually add reserved pasta cooking water until you reach your desired consistency.
  3. Step 3: Taste and Adjust Seasoning - Once blended, taste the sauce and adjust the seasoning as needed. You may want to add more salt, pepper, or lemon juice to enhance the flavor.
  4. Step 4: Combine with Pasta - Cook your pasta of choice according to package instructions. Reserve some pasta water before draining. Toss the cooked pasta with the cauliflower Alfredo sauce, adding reserved pasta water as necessary to help the sauce adhere to the pasta.
  5. Step 5: Serve and Enjoy - Serve the pasta with the creamy Alfredo Sauce immediately, garnished with additional grated Parmesan cheese and a sprinkle of freshly ground black pepper.

Notes

  • For a vegan version, substitute Parmesan cheese with nutritional yeast.
