- Start by gathering all of your ingredients. If you’re using canned salmon, drain it thoroughly and flake it into a mixing bowl. Chop the red onion and dill finely, and measure out the remaining ingredients.
- In a large mixing bowl, combine the flaked salmon, chopped red onion, chopped dill, mayonnaise, Dijon mustard, Old Bay seasoning, and the eggs. Stir until everything is well incorporated.
- Gently fold in the panko breadcrumbs until evenly distributed. The mixture should be moist but firm enough to hold its shape. If it feels too wet, you can add a little more panko.
- Using your hands, form the mixture into patties, about 2-3 inches in diameter. You should get about 8 patties from this mixture.
- Preheat your air fryer to 375°F (190°C). This step is essential for achieving that perfect crispiness.
- Spray the air fryer basket lightly with olive oil. Place the patties in the basket, ensuring they are not touching. Lightly spray the tops of the patties with olive oil as well. Cook for about 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
- Once cooked, remove the patties from the air fryer and serve them hot with lemon wedges on the side. They pair wonderfully with a fresh salad or some Air Fryer Sweet Potato Fries for a complete meal.
Notes
- For extra flavor, mix in some chopped capers or olives.
- These patties can be made ahead and stored in the fridge for up to 24 hours.
- Use fresh salmon for a richer flavor if you prefer.
