Ingredients
  

For the Chicken:
  • 1 pound chicken breast (about 4 small breasts)
  • 1/2 cup white whole-wheat flour or gluten-free all-purpose flour
  • 1/2 cup Italian seasoned breadcrumbs (gluten-free if needed)
  • 1/2 cup Italian seasoned panko (gluten-free if needed)
  • 4 teaspoons Italian seasoning
  • 2 teaspoons salt
  • 1/2 cup Parmesan cheese grated and divided
  • 2 large eggs
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese grated
  • Sliced basil for garnish

Method
 

Preparation Steps:
  1. Preheat your air fryer to 400°F (200°C). Place chicken breasts between two sheets of plastic wrap and pound to an even thickness of about 1/2 inch.
  2. Set up the breading station: In one bowl, place the flour. In another bowl, whisk the eggs. In a third bowl, mix breadcrumbs, panko, Italian seasoning, salt, and 1/2 cup Parmesan.
  3. Coat each chicken breast in flour, dip in egg, then coat in breadcrumb mixture, pressing gently to adhere.
  4. Place breaded chicken in air fryer basket in a single layer. Spray lightly with cooking spray. Cook for 10 minutes, flip, and cook for an additional 5 minutes.
  5. Remove chicken, spoon marinara sauce over each piece, sprinkle with remaining Parmesan, and top with mozzarella.
  6. Return chicken to air fryer and cook for another 3-5 minutes until cheese is melted and bubbly.
  7. Let chicken rest for a couple of minutes, garnish with sliced basil, and serve.

Notes

  • Use turkey cutlets or eggplant for a different protein.
  • Experiment with cheeses like provolone or dairy-free options.
  • Add crushed red pepper flakes for a spicy kick.
  • Store leftovers in an airtight container for up to 3 days.
