Instructions:
- Step 1: Prepare the Chicken. If using a chicken breast, slice it in half horizontally to create two thinner cutlets. Use a meat mallet or rolling pin to gently pound the chicken to an even thickness of about 1/2 inch.
- Step 2: Set Up Your Breading Station. In one shallow bowl, mix the flour and 1 teaspoon of garlic powder. In another bowl, whisk together the egg and water. Finally, combine panko breadcrumbs, grated Parmesan cheese, 1 teaspoon garlic powder, oregano, and crushed red pepper flakes in a third bowl.
- Step 3: Dredge the Chicken. Coat each chicken cutlet in the flour mixture, shake off excess, dip into the egg mixture, and then press into the breadcrumb mixture until well-coated.
- Step 4: Air Fry the Chicken. Preheat air fryer to 400°F (200°C). Lightly spray the basket with cooking spray. Place breaded chicken cutlets in a single layer. Spray tops lightly with cooking spray. Cook for about 10-12 minutes, flipping halfway through.
- Step 5: Add the Sauce and Cheese. Spoon prepared tomato sauce over each cutlet, top with mozzarella cheese. Return to air fryer and cook for an additional 2-3 minutes until cheese is melted.
- Step 6: Serve and Enjoy. Let the Chicken Parmesan sit for a minute before serving. Pair with a side salad, pasta, or garlic bread.
Notes
- For extra crunch, try mixing in some crushed cornflakes with the panko breadcrumbs.
- Don't overcrowd the air fryer to ensure even cooking.
- Experiment with different cheeses like provolone for a unique flavor.
