Baking Instructions:
- Step 1: Preheat your oven to 350°F (175°C). This ensures that your bars bake evenly.
- Step 2: Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later. Lightly grease the parchment paper.
- Step 3: In a large mixing bowl, combine the old-fashioned oatmeal, all-purpose flour, light brown sugar, baking soda, salt, and optional cinnamon. Mix well until all dry ingredients are evenly distributed.
- Step 4: In another bowl, whisk together the canola oil, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients and stir until just combined.
- Step 5: Spread half of the oatmeal mixture into the prepared baking pan, pressing it down firmly to create a solid base layer.
- Step 6: Pour the warmed dulce de leche over the base layer, spreading it evenly. Sprinkle the flaked coconut, followed by the roasted cashews, and finally, the semi-sweet chocolate chips over the top.
- Step 7: Dollop the remaining oatmeal mixture over the top, trying to cover the layers as much as possible. Drizzle the sweetened condensed milk over everything, and then bake in the preheated oven for 25-30 minutes, or until the edges are golden brown.
- Step 8: Once baked, let the bars cool completely in the pan. Melt the dark chocolate and drizzle it over the cooled bars.
- Step 9: Once the chocolate has set, use the parchment paper to lift the bars out of the pan. Cut into squares and enjoy!
Notes
- Prepare the bars up to two days in advance; store in an airtight container.
- For longer storage, freeze the bars for up to three months.
- Let the bars cool completely before cutting to help them hold their shape.
