Ingredients
  

For the Bars:
  • 1 15 oz can garbanzo beans rinsed and drained
  • 1 cup mashed ripe bananas about 3 ripe bananas
  • ½ cup creamy peanut butter or almond butter
  • 1 tsp vanilla extract optional
  • 1 tsp baking powder
  • ½ tsp ground cinnamon optional
  • a pinch sea salt
  • ½ cup chocolate chips optional

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Line an 8x8-inch baking pan with parchment paper or lightly grease it.
  3. Step 3: In a mixing bowl, mash the ripe bananas until smooth.
  4. Step 4: In a food processor, blend the garbanzo beans, mashed bananas, peanut butter, vanilla extract, baking powder, cinnamon, and sea salt until smooth.
  5. Step 5: Fold in the chocolate chips if using.
  6. Step 6: Pour the mixture into the prepared pan and spread it evenly. Bake for 25-30 minutes.
  7. Step 7: Allow to cool for 10 minutes, then cool completely on a wire rack before slicing.

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Freeze for up to three months and thaw in the fridge overnight.
  • Try using almond or cashew butter for a different flavor.
