Ingredients
  

  • 4 pieces ripe bananas heavily speckled or brown
  • 2 large eggs at room temperature
  • ½ cup light brown sugar adjust sweetness to taste
  • 2 cups self-rising flour or substitute with all-purpose flour and baking powder

  • Fork or potato masher
  • Loaf pan
  • Mixing spatula or wooden spoon

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your loaf pan or line it with parchment paper.
  3. In a large mixing bowl, mash the 4 ripe bananas until smooth.
  4. Add the 2 large eggs and ½ cup light brown sugar to the mashed bananas. Mix until well combined.
  5. Gently fold in 2 cups of self-rising flour into the banana mixture.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Ensure your bananas are very ripe for the best flavor.
  • Don’t overmix the batter to keep the bread tender.
  • Let the bread cool completely before slicing for the best texture.
