Ingredients
  

  • 2 tablespoons olive oil for sautéing
  • 1 onion finely chopped
  • 3-4 garlic cloves minced or grated
  • 1 15 oz can crushed tomatoes or marinara
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon crushed red pepper
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 4 boneless, skinless chicken breasts small-medium
  • 8 oz fresh or shredded mozzarella for topping
  • Fresh basil for garnish

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, until fragrant.
  2. Pour in the crushed tomatoes or your chosen marinara sauce. Stir in the Italian seasoning, garlic powder, crushed red pepper, salt, and pepper. Let the sauce simmer for about 5 minutes, allowing the flavors to meld together.
  3. While the sauce simmers, season the chicken breasts with salt and pepper. In a separate pan, heat a bit more olive oil over medium-high heat. Add the chicken breasts and cook for about 5-6 minutes on each side or until they are golden brown and cooked through.
  4. Once the chicken is cooked, nestle it into the simmering sauce. Sprinkle the mozzarella evenly over the chicken. Cover the skillet and let it cook for an additional 3-4 minutes, or until the cheese is melted and bubbly.
  5. Remove the skillet from the heat. Garnish with fresh basil leaves before serving.

Notes

  • For extra flavor, consider marinating the chicken in Italian dressing for a few hours before cooking.
  • Don’t rush the sautéing process; allowing the onions and garlic to caramelize brings out their natural sweetness.
  • If you love a bit of heat, increase the amount of crushed red pepper or add some chopped fresh chili.
  • Serve with a drizzle of balsamic glaze for a tangy twist!
