  • 3 tablespoons Parmesan cheese grated
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped
  • 2-3 cloves garlic grated or finely minced
  • 1 large lemon juice and zest, divided
  • 3/4 teaspoon fine sea salt adjust to taste
  • 1/2 teaspoon paprika for warmth
  • 1/4 teaspoon black pepper adds spice
  • 4 pieces Alaskan Cod fillets 8 ounces each

Method
 

  1. Preheat your oven to 400°F (200°C) for even cooking and a golden-brown crust.
  2. Lightly grease a baking dish with olive oil to prevent sticking and add flavor.
  3. In a mixing bowl, combine panko breadcrumbs, Greek yogurt, Parmesan cheese, parsley, basil, garlic, lemon juice, lemon zest, salt, paprika, and black pepper. Mix until well coated.
  4. Place cod fillets in the baking dish and squeeze lemon juice over them for added flavor.
  5. Spread the breadcrumb mixture evenly over the cod fillets, pressing down to adhere.
  6. Bake for about 15-18 minutes, until the fish is opaque and flakes easily. The topping should be golden brown.
  7. Remove from the oven, let cool for a minute, and serve with your favorite sides.
